Based on a wonderful eggless pancake recipe from Sailu’s Kitchen, I came up with these eggless pancake muffins –  they are delicious and very simple to make!

  • 1 tbsp vegetable oil
  • 1/2 cup milk
  • 1/4 tsp vanilla extract
  • 1/2 cup all purpose flour
  • a pinch of salt
  • 1/2 tsp sugar
  • 1 heaped tsp baking powder
  • a handful of pecans, coarsely chopped

Preheat oven to 350 degrees. Mix the first 3 (wet) ingredients in a medium bowl and the dry ingredients (except the pecans) in a separate bowl. Add the dry ingredients into the wet ingredients and mix well (but don’t over-mix) with a spoon. Add the pecans and mix until evenly distributed. Wipe a thin coating of vegetable oil into three cups of the muffin tin and divide the batter evenly into the three cups. Bake at 350 for about 15 minutes, or until just starting to brown. Remove carefully, drizzle with maple syrup, and enjoy!

Happy New Year!
